ABOUT US
We began in March, 2020 with just three college students. At that time, we created a small volunteer network to deliver food and prescription medications to elderly, quarantined, and confined people.
Our goal was not to create a non-profit. We simply wanted to help at-risk individuals during the COVID pandemic. However, this volunteer network grew quickly.
We saw firsthand the tremendous need for food assistance. This motivated us to build something permanent. With proper guidance, we shifted our efforts to become a mobile food pantry.
We began partnering with food pantries to provide home delivery for those who struggle to pick up for themselves. This is our current focus. We are now a registered 501(c)(3) non-profit.
Our volunteers deliver nearly 4,000 meals per week to clients in Utah County and Salt Lake County.
We plan on being around for the long haul. We want to make sure that no individual, family, or community goes unfed.

Executive Director
Keaton Schrank
she/they
Keaton Schrank (she/they) has a strong passion for ensuring that all members of her community have access to the resources they need to thrive! Originally from Texas, she received her bachelor's in environmental science and Italian studies from Wheaton College (MA) and her master's in geography from Oregon State University. They worked in higher education for 9 years, with roles in sustainability, basic needs, and teaching, before joining the Pantry to Porch staff in December 2025. In her free time, you can find Keaton reading, walking, thrifting, crafting, listening to showtunes, and spending time with her wife, Savanna, and their 3 cats!

Madi Shiba
she/her
​Madi Shiba (she/her) was born in Utah County and grew up exploring Utah’s beautiful state parks with her tight-knit family. She cares deeply about protecting Utah’s natural resources and about helping her community. She received her bachelor’s in Secondary Art Education from Utah Valley University and a master’s in Education from Western Governors University. She then taught visual art classes in public schools for 7 years before joining the staff of Pantry to Porch in July 2026. She enjoys hiking, sewing, reading, trying new foods, walking her dachshund Pepper, and traveling with her husband Bailey.

Carol Anderson
Carol is a data scientist and former molecular biologist. Originally from Southern California, Carol now lives in Lehi. She became invested in Pantry to Porch's mission through doing deliveries around Utah County starting in 2022, and joined the board in 2023. She enjoys hiking, skiing, and serving as an emotional support human for two quirky cats.
Vice Chair
Luke Stephenson
Luke Stephenson finds his greatest fulfillment in serving as a catalyst for the success of those around him. Originally from Colorado, he joined the Pantry to Porch Board of Directors in early 2026, inspired by the organization’s mission to provide reliable access to food and essential resources for our community. Professionally, Luke is a private equity investor at The Cynosure Group, where he focuses on evaluating and supporting long-term investments. Prior to Cynosure, Luke was a member of the Private Equity Group at Goldman Sachs and earned a B.S. in Financial Economics from Brigham Young University–Idaho.

Kathy Fife
​Kathy retired in 2020 after working for the Department of Workforce services for 29 years. Kathy held multiple positions during that time including Administrative Law Judge, SNAP Program Manager and Assistant Director of the Office of Child Care. While in the Office of Child Care, Kathy was co-administrator of the Child Care and Development Fund (a multi-million dollar federal grant) and was also instrumental in the design and implementation of the Child Care Quality System which is a system that rates the quality of private child care and pre-schools in Utah.

Bruce Lindsay
Bruce Lindsay anchored KSL Television’s Eyewitness News for 37 years after working for KABC Television in Los Angeles. His work has been recognized with a coveted Emmy, the Iris Award from the National Association of Television Program Executives, a Silver Medal from the New York Film and Video Festival, and numerous awards from the Utah Broadcasters Association and the Utah Society of Professional Journalists. He is the author of two books and is the narrator of many film and video documentaries and audiobooks. Lindsay holds an MBA degree and a BA in Communication.

John S. Lindsay
John Lindsay founded Pantry to Porch in 2020 in response to the pandemic and continues to stay involved as the organization grows, now serving as secretary. He is currently a medical student at the University of Utah with plans to pursue ophthalmology. Outside of school, he enjoys mountain biking, basketball, golf, and spending time outdoors.

Cindy Beebe
Cindy retired in 2023 from a successful career in radio and television advertising sales. Being retired has given her more time to serve within her community. She joined the board of Pantry to Porch in 2024 and delivers food for them weekly. She has been a member of Holladay Rotary since 2002 and held many board positions including 4 years as Co-President. She was a Co-Founder of the NGO, "Rafikis" whose main focus was improving conditions at the Ngala School for the Deaf in Nakuru, Kenya.

John B. Lindsay
John has been a shareholder of the law firm of Kirton McConkie since 2017. Prior to joining Kirton McConkie, John practiced law at the firm of Callister Nebeker & McCollough for 26 years where he served as a director and as chair of the Real Estate section. John represents commercial lenders in affordable multi-family projects and complex commercial real estate transactions.
John has been married to Ann Schofield Lindsay for 41 years. He has three children and five grandchildren. He enjoys family and travel.

Don Olsen
Don has enjoyed a lengthy career in various aspects of business, business
management and strategic business communications. He spent 18 years in
senior management at Huntsman Corporation, a multi-national, publicly-held
chemical company, overseeing the company’s global public affairs, public
relations and marketing communications initiatives. Prior to joining Huntsman he
had a distinguished career in broadcast journalism. Don helped found and was
the first Executive Director of the Utah Anti-Bullying Coalition, a 501 C 3
dedicated to helping stamp out bullying in Utah schools. He also worked in
Washington, D.C. as Director of Communications on the staff of U.S. Senator
Jake Garn.

Dennis Rutledge
Hi! I’m Dennis Rutledge, and I’m so excited to be on the Pantry to Porch Board! Having been to undergraduate and graduate school for community development and many years in community development for Salt Lake City’s Housing Stability Division, I have seen Utahs most vulnerable population, and the need that is required help feed, and house the individuals. I deeply believe that the mission and work Pantry to Porch provides the valley is invaluable and I couldn’t be more proud to be apart of that help!
